Abstract:
As a unique type of liquor in China, Chinese Baijiu occupies a huge share in the domestic consumption market. However, Chinese Baijiu under natural aging needs to be stored for a long time to make the liquor mellow and stable, and the investment cost is high. Therefore, it is of great significance to accelerate the aging of Chinese Baijiu. In this paper, the aging mechanism of Chinese Baijiu, the aging technology of Chinese Baijiu based on physical, chemical and other methods, and the methods of testing the age of Chinese Baijiu were reviewed. Besides, the research prospect of the aging technology of Chinese Baijiu was discussed, providing a theoretical basis for the future research on the aging of Chinese Baijiu.
